If you’re looking for a good-for-you yummy snack, these zucchini brownies are for you. We are big fans of sweet treats but on really cutting back on the sweetener. These zucchini brownies give you all the chocolate feels without the guilt!

Slice your zucchini into medium sized chunks prior to adding to your mini food processor. I used coconut sugar, but you can use any granulated sweetener here. I used olive oil but you can use any neutral oil like avocado oil or melted butter. If you like a healthy zucchini you should try my Healthy Zucchini Banana Bread.

These healthy zucchini brownies are made quickly in your food processor or blender. They are a great chocolatey treat when those cravings hit!

  • Preheat oven to 350℉. Line an 8×4 inch loaf pan with parchment paper.
  • Cut your zucchini into medium size chunks. In a mini food processor, add in the zucchini chunks, egg, cacao powder, rolled oats, coconut oil, coconut sugar, and vanilla and blend until smooth. Add in the chocolate chips and mix in. Transfer batter into pan and spread out evenly. If you like, sprinkle the top with extra chocolate chips for aesthetic. Bake for 40-45 minutes or until toothpick comes out clean. Top with flaky sea salt. Allow to set in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

notes

  1. *Use 3/4 cup of coconut sugar for sweeter brownies.
  2. Store leftovers in an airtight container.
  3. Make sure you use dairy free chocolate chips if you want to keep this dairy free.
  4. To make this gluten free make sure you use gluten free oats.
